Mitchell students get hands-on with food truck study

Mitchell High School students in Stephanie McClellan’s food and nutrition II classes recently got hands-on with their study of the food truck business.

The topic has become popular in food and nutrition classes with the rising popularity of food trucks in the modern age.

While learning about entrepreneurship and how the food truck business works, students heard from the owners of Rascal Jack’s Sandwich Shack, a Boone-based food truck.

The owners spoke to the students about starting their own food truck and described the hard work that goes into the daily operations. Students were then treated to a Rascal Jack’s lunch.

To cap the project, students were tasked with creating a signature dish that could be served at their own food truck.

One group of students, consisting of Alejandra and Maria Velazquez and Roverto Acuapa, made tortillas by hand, rolling out the mixture by hand and heating it on a skillet.

Another duo, Evan Gardner and Mason English, got inspired by Italian fast-casual dining and made pizzas by hand, throwing fresh ingredients and sauce onto the dough before tossing it in the oven.

“In the future, don’t be surprised if one of these students has their own unique food truck business in Mitchell County,” said career and technical education facilitator Denise Murphy.
